Ingredients:
Extra virgin olive oil
4 boneless skinless chicken breasts
2 teaspoons kosher salt
1 teaspoon ground black pepper
8 oz basil pesto
1 large peach, thinly sliced
2 cups cherry tomatoes, halved
1 mozzarella ball, cut into ½ inch thick rounds
Balsamic glaze or balsamic vinegar
Fresh julienned basil for garnish
Method:
Preheat the oven to 400F. Drizzle 1 tablespoon extra-virgin olive oil on the bottom of an oven-safe baking dish.
Pat chicken dry and season with the salt and pepper on both sides.
Add the chicken to the baking dish making sure the pieces aren’t overlapping and leaving pockets of space for the tomatoes. Add 2 tablespoons of basil pesto to each chicken breast and spread it evenly over the tops of the chicken with the back of a spoon. Bake for 15 minutes.
Remove from the oven, nestle the peach slices and tomato around the chicken, drizzle the whole baking dish with 1 tablespoon of extra virgin olive oil and return to the oven for another 15 minutes or until the chicken registers at 165F.
Remove from the oven, add the mozzarella slices on top of the chicken 1-2 pieces per chicken breast, drizzle with balsamic and return to the oven to bake 3-5 more minutes until the mozzarella is nice and melty. Garnish with fresh basil and serve hot.
