Bacon + Blue Honeycrisp Salad

Crispy bacon, tangy blue cheese, and sweet Honeycrisp apples come together in this bold, flavor-packed salad. Tossed with fresh greens and a warm bacon vinaigrette, it’s the perfect balance of savory, sweet, and crunchy. This irresistible combo makes for a gorgeous side or satisfying main dish.

for the bacon dressing:

  • 4 slices applewood bacon, ½” diced

  • 2 tablespoons maple syrup

  • 2 teaspoon dijon mustard

  • 1/3 cup extra virgin olive oil

  • 3 tablespoons apple cider vinegar

  • ½ teaspoon kosher salt

  • ¼ teaspoon ground black pepper

for the Salad:

  • 10 oz mixed greens (I like a mix of red butter lettuce and baby spring mix)

  • 1 cup diced honeycrisp apple

  • 1/2 cup crumbled blue cheese

  • 1/2 cup toasted walnuts or pecans, roughly chopped

  • 1/2 cup dried cherries

Method:

  1. In a skillet, sauté the diced bacon on medium heat for 6-8 minutes or until just crisped. With a slotted spoon, transfer the bacon bits to a paper towel and set aside.

  2. Remove the skillet from the heat and carefully spoon one tablespoon of the bacon fat into a mason jar for the dressing. Add the remaining dressing ingredients to the mason jar, seal tighly with the lid and shake vigorously.

  3. Assemble the salad: add the mixed greens, honeycrisp apple, blue cheese, toasted nuts, dried cherries and bacon to a large mixing bowl. Drizzle with the dressing, toss and serve.
