Picnic and BBQ Season are finally in sight after this extended winter and I couldn't be more ready! I, for one, love a great on-the-go crowd pleaser and this checks all the boxes: Za'atar spiced chickpeas tossed in a creamy, herby, lemony dressing. This one is foolproof, delicious and the perfect addition to your next get together!
Ingredients (Serves 4 sides):
2 cans chickpeas, drained and rinsed
2 tablespoons of mayo
2 tablespoons of whole Greek yogurt
3 large garlic cloves, minced
¼ cup fresh mint, chopped
¼ cup parsley, chopped
Juice of 1 lemon plus 1 teaspoon zest
3/4 teaspoon salt
1/2 teaspoon pepper
1 1/2 teaspoon za’atar seasoning
More mint and parsley for topping
Pinch of flaky sea salt for topping
Directions:
In a large mixing bowl, add the drained chickpeas. Take a fork and smash 1/3 of the chickpeas and mix with the whole chickpeas. Add the mayo, yogurt, garlic, herbs, lemon juice, zest, za'atar, salt and pepper and mix until well combined. Taste and adjust with salt to taste. Garnish with more mint, parsley and flaky sea salt. Refrigerate for at least 30 minutes before serving.
