Watermelon + Pistachio Salad

It's summer, which also means it's watermelon season!! My absolute favorite fruit and the base for one of my favorite healthy go-to salads. There is almost zero effort to this salad with all the reward! The juicy watermelon combined with fresh mint, toasted pistachios and creamy goat cheese make for a perfect plate. Enjoy!

Ingredients (Serves 4):

  • 1 pound watermelon, cubed

  • 1 tablespoon fresh mint, chopped

  • 4 ounce goat cheese, crumbled

  • 2 tablespoons pistachios, toasted

  • Pinch of flaky sea salt (I like Maldon)


  • Heat a small saute pan to medium high heat and toast the pistachios until they are fragrant (2-4 minutes). Take off the heat and let cool.

  • Scatter watermelon cubes on a large plate or platter. Scatter the goat cheese crumbles over the watermelon, then repeat with a layer of chopped mint leaves and toasted pistachios.

  • Finish with a pinch of flaky sea salt and serve!
