Roasted Asparagus with Balsamic Strawberries + Goat Cheese

Asparagus is one of the most versatile greens out there, which makes it the perfect addition to almost any dish! In the summer, I love to pair it with other fresh, seasonal ingredients and so when I picked up these gorgeous Coke Farms strawberries at the grocery store, this recipe came together pretty quickly! Flavorful, fork tender asparagus topped with sweet strawberries, tangy goat cheese and toasted pistachios makes for a delicious, creamy and crunchy dish! Great paired with salmon or chicken. Enjoy!

For the asparagus (serves 4):

  • 1 bunch of fresh asparagus, woody ends trimmed

  • 1 tablespoon extra virgin olive oil

  • 1/4 teaspoon salt

  • Pinch of black pepper

For the vinaigrette:

  • 1/4 cup extra virgin olive oil

  • 3 tablespoons balsamic vinegar

  • 1 tablespoon honey

  • 1/4 teaspoon salt

  • 1/4 teaspoon pepper

  • 1 cup strawberries, diced

For the garnish:

  • 2 tablespoons goat cheese crumbles

  • 1 tablespoon pistachios, toasted (optional)

  1. Preheat the oven to 400 degrees F.

  2. Add the stalks to a sheet pan. Drizzle with olive oil, salt and pepper. Toss until each stalk is well coated. Lay the stalks in a single layer on the sheet pan taking care not to overcrowd them. Roast for 12-15 minutes, until tender.

  3. While the asparagus roasts, add the diced strawberries to a medium sized bowl. In a separate small bowl, combine the extra virgin olive oil, balsamic vinegar, honey, salt and pepper and whisk vigorously.

  4. Pour 2 tablespoons of the vinaigrette over the strawberries and lightly toss to coat.

  5. Assemble the roasted asparagus on a plate. Spoon the balsamic strawberry mixture over the asparagus. Top with goat cheese and pistachios. Drizzle with more vinaigrette to taste. Dig in!
