Pickle lovers: this one's for you and just in time for the holiday weekend! A medley of sweet and dilly pickles mixed with brussels and creamy dressing. The perfect compliment for your grill night, picnic or potluck! HIGHLY suggest with grilled brats, fried chicken or an Italian sub. Enjoy!
Ingredients-serves 4 sides:
1 tablespoon mayo (I like Duke's)
1 tablespoon stone ground mustard
2 tablespoons dill pickles, finely diced + 2 tablespoons pickle juice
2 teaspoons sweet pickle relish
1/4 tsp salt
10 oz shaved brussels
In a large mixing bowl, add the first 5 ingredients and mix until fully combined.
Add the brussels and toss until well coated. Season to taste. Let sit for 5 minutes, so that the brussels soak up all the pickly goodness. Enjoy!
