Cherry Coconut Overnight Oats

There is just something about overnight oats that are deeply satisfying. I will never tire of them and there are so many ways to customize them! And with cherry season upon us (PRAISE BE), what better way to incorporate these perfect antioxidant-rich morsels into your daily routine! This recipe couldn't be easier to prep the night before and makes for a super nourishing and flavorful breakfast that will give your morning an added boost. Enjoy!


3 Servings

Ingredients:

  • 1 1/2 gluten free old fashioned oats (I like Bob's Red Mill)

  • 1 can coconut milk (full fat)

  • 1 teaspoon vanilla

  • ½ cup cherries, pitted and quartered

  • 2 tablespoon honey

  • 2 tablespoon coconut flakes

  • Optional toppings: nut butter, additional chopped cherries and coconut flakes

Directions:

  1. In a large bowl, mix all ingredients until well combined then divide evenly into 3 mason jars or containers of choice. Tightly seal and pop in the fridge overnight!
