Apple Pie Overnight Oats

One of my favorite things to meal prep for the week is overnight oats. They are healthy, simple and make a great on-the-go guilt-free breakfast! Because we are in the throws of the holiday season, I am constantly craving all the classic holiday treats, one of the best being apple pie. So if you are also craving pie for breakfast, you're in luck with this delicious treat!

Ingredients:

  • 2 cups old fashioned or GF oats

  • 1 1/2 cup milk of choice (I like unsweetened vanilla almond milk)

  • 8 oz or 2 snack containers of cinnamon applesauce, unsweetened

  • 1 tablespoon maple syrup

  • 1 teaspoon vanilla

  • ½ teaspoon ground ginger

  • ½ teaspoon cinnamon

  • 1/3 cup soft dried apples, chopped

  • 1 teaspoon chia seeds, optional

  • Diced apple, optional

  • Chopped Walnuts, optional

  • Honey, optional

Directions:

  1. Combine all ingredients in a large mixing bowl until fully incorporated. Transfer to individual serving jars with lids or a tightly sealed container to the refrigerator and let sit overnight. Top with fruit, nuts, and honey if desired and enjoy! These oats will be good for the next 5 days refrigerated.
